Honey baked lentils save my life.

1 tbs olive oil
1 diced onion
1 cup lentils
2 cups water
2 tbs soysauce
2 tbs honey
1 clove crushed garlic
1 tbs yellow mustard
1/2 teaspoon ginger

Put all of this into a casserole and bake at 350 for 90 minutes.

Serve with rice and microwave frozen veggies or over toast if you are feeling lazy.

(Edit 2/17/09: This is excellent substituting maple syrup for the honey if you are so inclined).
